"Mac Mug Cake"

1/2 oz. of mac nuts (grind them into a powder. The powder will be a bit sticky because mac nuts are a softer nut than almonds)
1 Tbl. cocoa (or 1/2 Tbl. dark cocoa + 1/2 Tbl. cocoa)
1-1/2 Tbl. Xylitol
2 packets Splenda for Coffee Vanilla flavor (or vanilla flavoring of your choice)
1 egg
3 Tbl. heavy cream
1 Tbl. coconut oil

Combine ground mac nuts, cocoa, sweetener, and vanilla in coffee mug. Mix in one egg. Add heavy cream and mix well. Last, add your tablespoon of coconut oil. If it clumps up due to the cold mixture, don't worry about it. That is normal. Just make sure to break it up into smaller clumps. Microwave for 90 seconds.

Optional: Top with fat-free Reddy Whip (only around 10-15 calories per serving)

Onion Rings


80g sliced onion rings
1 grissini
1 T
skim milk (as allowed daily)
1/4 t cayenne pepper
1/4
t salt
1/4 t pepper

Preheat oven to 450.In a small bowl, add milk, cayenne pepper, salt, pepper. Mix to make a batter.Grind grissini in food processor until it is a
powder. (I use my coffee grinder.)Put grissini in a separate small bowl.Place rings in batter bowl and toss to coat fully. (It's best to use your hands here to ensure you coat each ring.)Let sit in batter 2-3 mins then toss again.Dip each ring into the grissini powder by hand. I find it works best to do these one at a time, rolling the ring in the grissini coating instead of tossing or shaking it on.Place on cookie sheet lined with non-stick aluminum foil.
Cook 6-7 mins. Then flip, cooking an additional 6-7 mins. Serve immediately.

NOTE: Don't expect these to look like a diner's fried onion rings when you pull them out of the oven. I have to admit I was disappointed the first time when I saw them come out thinking I failed somewhere along the line. But then I tasted them. YUM! To me, they tasted like good ol' onion rings but without all the grease

Savory Chicken Soup



100 g chicken breast, cubed
1-2 cups chopped celery (may use
tomatoes
instead)
2 cups chicken broth (may substitute
1 cup water for 1 cup broth)
1 Tablespoon minced onion
2 cloves garlic, crushed and sliced
1 bay leaf
1/2 teaspoon poultry spice blend
Cayenne pepper to taste
Salt and black pepper to taste

Bring chicken stock to a boil. Add onion, garlic and spices. Add chicken and vegetables and simmer on low heat for 20 minutes or more until chicken and celery are tender and fully cooked. Serve hot. Sprinkle with chives or parsley if desired

Steak (or Chicken) Pizzaiola



100g steak (or chicken)
tomato (diced)
2-3 cloves minced garlic
......1 t oregano
1 t basil
1/4 t chili powder
black pepper

Directions:
Preheat oven to 350. Place 1/2 of the diced tomato in casserole dish.Add meat on top of tomato and top with minced garlic. In small bowl, toss the rest of tomato with the oregano, basil, chili powder, and black pepper. Place on top of steak.Cover tightly with aluminum foil or with lid.Bake 45-60 mins.

TIP:
If using chicken, sear each side for a minute or two in a frying pan
with a dash of salt/pepper (until just browned). Then follow with same
steps as above.

Thai Lemon Cilantro Beef with Peppers




100g beef(steak)
1/2 juice of a lemon
Allowed amount of lettuce
cilantro
mint
salt for taste
red pepper flakes

Directions:
cook your steak, slice it thinly, put it in a bowl. Add your lettuce chopped
cilantro, and mint squeeze the juice of your lemon over it and sprinkle with salt and pepper flakes and toss it around. Yummy!

Egg Drop Soup




2 C. fat free organic chicken broth or veg. broth (or 1 cup broth
and 1cup water)
dash of garlic powder - to your taste
2 tsp. Braggs Liquid Amino Acids
3 drops of Tabasco
salt/pepper to taste
3 egg whites
Green onions, thin slices

Directions:
In a small sauce pan, bring broth/water, Braggs, spices & Tabasco to a boil.
While waiting for boil, whisk eggs together quickly until fluffy. Once broth
boils, pour eggs into saucepan and cook for another minute. Pour
immediately into a bowl and serve - garnish with green onions.

Chunks P2 Chilli

1 C. water
2 oz minced onion or onion powder
Italian seasoning to taste
minced garlic to taste
4 oz bison or lean beef
1 whole tomato, chopped
1 tsp. chilli powder
salt & pepper to taste
garlic salt (optional)

Put bison in pan and saute', put in italaian seasoning and garlic & onion. Put in the tomato, chilli powder, garlic salt, salt & pepper. Add water. Simmer bout 20-25 minutes.

What I do is saute the beef/bison until done. I put the water, tomato, and all the seasonings in a mini crockpot, then add the beef/bison. I do this the night before, let simmer on low all night making sure there is plenty of liquid in it, then the next morning turn up on high till done. Will be done by lunch.

P2 Taco Seasoning

2 tsp. instant minced onion
1/2 tsp. crushed dried red pepper
1/2 tsp. ground cumin
1/4 tsp. cayenne pepper
1/2 tsp. minced garlic

Add 1/2 Cup water & seasoning to meat and simmer 10 minutes.
